Bring to a boil after 15 minutes, add baking soda. Baking soda will hasten the softening of the pata’s skin. Continue cooking for another hour or until tender. If water dries up and pata is not yet done, add another cup of water. Drain when done.

Hang for 1 day or place in refrigerator overnight to make skin dry. Before frying, brush with patis (fish sauce) and sprinkle with flour generously.

Deep fry until crispy and golden brown. Put off heat and pour 1/4 cup water. This will make the skin more crispy.

Serve it with cracklings side dish! Enjoy eating!

Special thanks to Recipezaar.com for this yummy recipe!

Special Beef Calderetta Recipe

Beef Kaldereta Ingredients:

1 kilo beef, cut into chunks

1/2 cup ground liver

5 onions, minced

5 cloves garlic, minced

6 tomatoes, sliced

1 cup tomato sauce

3 green peppers, diced

3 red peppers, diced

4 pieces hot chili peppers, minced

3/4 cup grated cheese

2 cups beef stock or water

1/4 cup cooking or olive oil

Kaldereta Cooking Instructions:

In a casserole, sauté: garlic and onions in oil. Just follow these simple steps and you can have this yummy vegetable guisado that Pinoys especially Ilocanos really love. Since I'm residing here in UK, I listed here the alternative ingredients . Here's how:

Ingredients:

1 Medium British Squash (Diced)

1 Pack of String Beans

1/2 cup of Medium Prawn, (Peeled and Semi-cooked)

3 Cloves of Garlic, Crushed

1 Medium sized onion, sliced

1 Medium Sized Tomatoes Diced

2 Tbsp of Oil

4-5 tbsp of Anchovy Bagoong or Halubaybay (Alamang)

Procedure:

1. In a pan, saute garlic till golden brown.

2. Add onion till it turns transluscent.

3. Put tomatoes stirring constantly then add prawns. Cook for a minimum of 3 minutes in a medium heat. (Don't burn)

4. Add squash. Saute for 3 minutes then add the beans.

5. Seasoned it with bagoong halubaybay or alamang, msg and add at least 3/4 cup of water and bring to boil. Do not put too much water.

6. Serve it in a glass bowl with rice.

Easy! I feel I'm home (Philippines) when I've done this recipe. And so I share a bowl of it to my Pinay neighbor. Cheers!

Okoy Recipe (Squash and Bacon)

Here's another experimented recipe. Íve just found a British squash that I can use in Okoy recipe that my Nanay used to cook when I'm still young. The easy way but still very tasty
2. The hard way but allows to suit to personal taste

The easy way on how to make Spaghetti Bolognese is to buy pre-made ingredients. You will need Spaghetti Pasta, a Jar of Bolognese Sauce (My personal favourite is Dolmio), 500 grams of Beef Mince (Feeds 3 - 4) and your favourite brand of Cheese, if you like Cheese that is.

1. To begin, you must insert the mince into a saucepan on full heat and stir until the mince has browned.
2. Then drain the fat and reduce the heat to low.
3. Add the sauce and stir well.
4. Allow the mince and sauce to simmer for 20 minutes stir occasionally.
5. 10 minutes into the mince simmering, insert the desired amount of spaghetti into a sauce pan with boiling water. (That way you will time the meal to perfection.)
6. During the last 10 minutes of cooking time, as well as stirring the mince and sauce occasionally. You may wish to take the opportunity to grate the cheese.
7. After the 20 minutes of simmering the mince and 10 minutes of boiling the spaghetti, your meal will now be ready to serve.
8. Drain the water from the spaghett and serve. My personal way of serving is to put the spaghetti on the plate first, followed by the mince and then top it with a sprinkle of cheese.

The hard way of making spaghetti bolognese which may be preferable to you, is to make your own bolognese sauce. Please click the link below to see my personal recipe.

Type rest of the post here

Chinese Stir Fry with Cucumber

Ingredients:
1/2 Cucumber cut into strips
2 Pork Steak cut into strips
Bell Pepper Cut diagonally
medium sized carrots, diced
String Beans
Medium sized onion, chopped
4 cloves of garlic chopped
1 Medium sized tomatoes, chopped
small pc of ginger diced
1/2 cup og pork broth
Ground Pepper
Salt and MSG

Procedure:
1. Its easy to cook and the ingredients is available everywhere.

Ingredients:

1/4 Red/Green Pepper, chopped
1 Medium Sized White Onion, Chopped
2 Slices of Smoked Bacon, chopped
1 Tsp. Butter
1 Spring Onion cut diagonally (thin)
3 pcs of Eggs
1/4 cup Carrots,chopped
1 tbsp Vegetable oil
1 cloves Garlic, chopped
Parsley, chopped
Salt

Proceedure:

1. In a frying pan, saute Garlic till it turns golden brown followed by onion.

2. Put the Bacon and saute it for a few minutes till its cooked.

3. Put the Red/Green Pepper, Carrots and Butter. Mixed it for 5 minutes.

4. Season it with salt, Black pepper and Msg to taste.

5. Remove it out of the pan.

6. Put the beaten eggs in the Express Omelette and then put 3 tablespoon on top of it together with spring onion. Cover it till its ready to serve.

If Omelette Express is not available, you might as well use the pan. In a medium heat, pour the beaten eggs in it and spread it evenly. Cook until the edges of the omelet begin to get firm. Uncover and run a spatula around the edges to keep it from sticking to the pan.
When the center of the omelet is almost firm, place a medium amount of cooked mixtures. Continue cooking till the top is lightly set and the under side is a light golden brown. Fold the omelette in half and slide on to a warm plate.

Tips: You can put diced cheese on top of the mixtures before you fold it to taste better. In the picture I ate it with rice. ( If you're not on diet you might as well try it) Cheers!
