Special Beef Calderetta Recipe

106_9556Beef Kaldereta Ingredients:
  • 1 kilo beef, cut into chunks

  • 1/2 cup ground liver

  • 5 onions, minced

  • 5 cloves garlic, minced

  • 6 tomatoes, sliced

  • 1 cup tomato sauce

  • 3 green peppers, diced

  • 3 red peppers, diced

  • 4 pieces hot chili peppers, minced

  • 3/4 cup grated cheese

  • 2 cups beef stock or water

  • 1/4 cup cooking or olive oil

 

Kaldereta Cooking Instructions:
  1. In a casserole, sauté: garlic and onions in oil. Then add tomatoes, red & green pepper and chilli peppers.

  2. Add in the beef, tomato sauce, liver spread and water or stock. Salt to taste and let simmer for at least 1 hour or until the beef is tender.

  3. Add cheese and olives (optional) and continue to simmer until the sauce thickens.

  4. Serve with plain rice

Squash and String Beans Guisado w/ Prawns Recipe

This recipe is easy to make. Just follow these simple steps and you can have this yummy vegetable guisado that Pinoys especially Ilocanos really love. Since I'm residing here in UK, I listed here the alternative ingredients . Here's how:

Ingredients:

1 Medium British Squash (Diced)

1 Pack of String Beans

1/2 cup of Medium Prawn, (Peeled and Semi-cooked)

3 Cloves of Garlic, Crushed

1 Medium sized onion, sliced

1 Medium Sized Tomatoes Diced

2 Tbsp of Oil

4-5 tbsp of Anchovy Bagoong or Halubaybay (Alamang)

 

Procedure:

1. In a pan, saute garlic till golden brown.

2. Add onion till it turns transluscent.

3. Put tomatoes stirring constantly then add prawns. Cook for a minimum of 3 minutes in a medium heat. (Don't burn)

4. Add squash. Saute for 3 minutes then add the beans.

5. Seasoned it with bagoong halubaybay or alamang, msg and add at least 3/4 cup of water and bring to boil. Do not put too much water.

6. Serve it in a glass bowl with rice.

Easy! I feel I'm home (Philippines) when I've done this recipe. And so I share a bowl of it to my Pinay neighbor. Cheers!

Okoy Recipe (Squash and Bacon)

Here's another experimented recipe. Íve just found a British squash that I can use in Okoy recipe that my Nanay used to cook when I'm still young. Since I don;t have shrimp here, I used Bacon as alternative. Check it out!

Ingredients:

1. Medium Size Onion chopped

4 Cloves of Garlic, chopped

1 Cup of grated Squash

1 Cup All Purpose Flour

1-2 Eggs

Ground Pepper

Msg,Salt,Oil

Chopped Bacon

Procedure:

1. Mix all the ingredients with enough lukewarm water.

2. Put enough oil in the pan and bring it to boil.

3. Using spoon, flatten scoop of mixture to the pan and cook it till golden brown.

4. Make a Vinegar sauce suing chopped onion, spicy chili and vinegar.

Cucumber Omelette Recipe

I admit, I love experimenting! Well Í don't know if there is a recipe like this listed on the website. But I will share this recipe that you might as well try.

Ingredients:

1 Med. Cucumber, diced

1 Med. Onion, chopped

3 cloves garlic, chopped or crushed

2 Med. Tomatoes Chopped

2 slice of Bacon, chopped ( You can use pork meat or shrimp)

1-2 Medium Eggs

Oil,salt, msg. (optional) to taste

 

Instuction:

1. In a pan, pour 2 tbsp. of oil. Add garlic, onion tomatoes and bacon. Saute for a couple of minutes.

2. Add cucumber (Do not over cooked).

4. Seasoned it with salt, ground pepper and Msg. (optional)

3. Beat eggs and pour it in the pan stirring constantly till the egg is done.

4. Serve it with plain or fried rice.

Spinach Recipe (Experimented)

Ingredients:

1/2 cup of plain flour
1 egg
1/4 cup of lukewarm water
Spinach leaves
black pepper
oil
salt
msg

Procedure:

1. In a glass bowl, m
ix flour,egg,water,black peper, salt and msg all together. Mix well.
2. Heat the oil in the pan.
3. Coat spinach leaves with the flour mixture then fry till it turn golden
brown or until it turns crispy.
4. Serve it with vinegar, chopped onion, chilli mixture.

ITALIAN FOOD - Spaghetti Bolognese

This is my second favourite Italian Dish and there are two ways of making it.

1. The easy way but still very tasty
2. The hard way but allows to suit to personal taste

The easy way on how to make Spaghetti Bolognese is to buy pre-made ingredients. You will need Spaghetti Pasta, a Jar of Bolognese Sauce (My personal favourite is Dolmio), 500 grams of Beef Mince (Feeds 3 - 4) and your favourite brand of Cheese, if you like Cheese that is.

1. To begin, you must insert the mince into a saucepan on full heat and stir until the mince has browned.
2. Then drain the fat and reduce the heat to low.
3. Add the sauce and stir well.
4. Allow the mince and sauce to simmer for 20 minutes stir occasionally.
5. 10 minutes into the mince simmering, insert the desired amount of spaghetti into a sauce pan with boiling water. (That way you will time the meal to perfection.)
6. During the last 10 minutes of cooking time, as well as stirring the mince and sauce occasionally. You may wish to take the opportunity to grate the cheese.
7. After the 20 minutes of simmering the mince and 10 minutes of boiling the spaghetti, your meal will now be ready to serve.
8. Drain the water from the spaghett and serve. My personal way of serving is to put the spaghetti on the plate first, followed by the mince and then top it with a sprinkle of cheese.
