Crispy Pata Recipe

Ingredients :

  • Medium sized Pork Leg/Pork Shank
  • 1 Glass/bottle of Sprit or 7-up ( Lemonade will do)
  • 1 1/2 Cups of water
  • 1/2 tsp baking soda
  • 1 tsbp salt
  • 2 tbsp flour
  • 2 tbsp fish sauce
  • 1 tsp msg or vetchin
  • 2-3 cups of water ( covering the pata for boiling)
  • Oil ( enough for deep frying)

Sauce Ingredients :

  • 3/4 cup vinegar
  • 1/4 cup soy sauce
  • 1 medium sized onion chopped
  • 2 garlic cloves, crushed and chopped
  • 1-2 small red chilli pepper chopped
  • salt and pepper

Procedure :

  1. Clean the pork shank/pork leg ( remove remaining hairs ) and slit skin on both side (3-4 slits) without cutting the bone.
  2. Place it in a deep pan with tight cover
  3. Add water, 7-up, msg and salt. Bring to a boil after 15 minutes, add baking soda. Baking soda will hasten the softening of the pata’s skin. Continue cooking for another hour or until tender. If water dries up and pata is not yet done, add another cup of water. Drain when done.
  4. Hang for 1 day or place in refrigerator overnight to make skin dry. Before frying, brush with patis (fish sauce) and sprinkle with flour generously.
  5. Deep fry until crispy and golden brown. Put off heat and pour 1/4 cup water. This will make the skin more crispy.
  6. Serve it with cracklings side dish! Enjoy eating!

Spring Roll Recipe ( Pork and Vegetables)


Ingdredients:
1 medium pack of mixed vegetables ( bean sprouts,onion,cabbage,beans,bell pepper,carrots)
3 slices of Pork steak ( Minced, chopped ) or Ground Pork
1 Medium sized Onion ( Chopped )
4 cloves of garlic ( Minced )
2 tbsp vegetable Oil
Ground Pepper
Msg
Salt
Spring Roll Wrapper

Procedure:
1. Saute garlic, onion and meat over medium heat.
2. Add Vegetables seasoned with salt , ground pepper, msg to taste.
3. Roll the stir-fried vegetables on your Spring Roll Wrapper.
4. Deep fry and serve while its hot.

Pork Broth Soup ( Nilagang Baboy)

Ingredients:

2 Medium sized Pork Ribs cut into cubes
1 Medium sized Onion, quartered
4 Medium Sized Potatoes, Quartered
3 Banana ( Saba ), quartered
3 Cloves Garlic, Crushed
1 Tsp. Peppercorns
1/2 Tst Ground Pepper
6 Nana Cabbage Leaves cut into 1/1/2 inches
1/4 String Beans
2 Spring onion cut diagonally
4 Cups of Water
Salt and Msg to taste

Procedure:
1. Put the pork and water into boil, with salt till the pork is tender.
2. Add onion, garlic, Peppercorns and potatoes and cook till potatoes are cooked.
3. Add nana cabbage, beans, ground pepper and MSG. Bring to boil till the cabbage half-cooked.
4. Add the spring onion and simmer for few minutes.
5. Serve it with rice while its hot.

Barbeque Recipe ( FIlipino Style)

Ingredients:

  • 10 Medium sized Pork Loins
  • 20 bamboo skewers
  • 1 Cup Toyomansi ( Datu Puti )
  • 1 head garlic, Minced
  • 1 medium sized onion, finely chopped
  • 1/2 cup 7-up, lemonade or beer
  • 2 tsp. ground pepper
  • 3 tbsp of brown sugar/white sugar
  • 1/3 cup tomato catsup (Heinz)
  • 2 tbsp sesame toasted oil ( optional )
  • dried parsley
  • msg
Vegetables:
  • Bell pepper ( preferable red,green and yellow)
  • Cherry tomatoes
Instructions:
  1. Cut the pork meat into thin and long slices about 1 inch.
  2. In a bowl, marinated the pork with all the ingredients mentioned including the lemonade to tenderize the pork.
  3. After marinating it, Keep it in the refrigerator for about 6 hours or overnight.
  4. When the meat is ready, prepare the bamboo sticks by removing splinters and by soaking it into the water to reduce burning during grilling .
  5. String the pork on the skewers with your bell peppers and cherry tomato in between.
  6. Grill the pork over live charcoals turning every few minutes on each side untill each barbeque is cooked.
  7. You can also used the marinate leftover on the barbeque while grilling.

Fried Chicken Recipe

Fried Chicken Ingredients:

  • 1 1/2 kilo chicken, cut into pieces

  • 1/4 cup of white vinegar

  • 5 cloves of garlic, crushed

  • 1 cup of water

  • 2 cups cooking oil

  • Salt and pepper to taste

Fried Chicken Cooking Instructions:
  • In a pot, simmer chicken in vinegar, garlic, water, salt and pepper.

  • Remove just before the chicken is fully cooked.

  • Strain off liquid.

  • In a frying pan or wok, heat oil and deep fry the chicken until golden brown

  • Place on paper towel to remove excess oil

  • Serve hot with rice and sliced cucumber or atchara on the side.

Pork Kilawin

PORK KILAWIN

Estimated cooking time: 40 minutes

Ingredients:
1 kilo pork skin
1/3 cup soy sauce
1/2 cup Vinegar
2 medium onions, chopped
3 medium tomatoes, (Optional)
Ground Pepper
4 cups of water
1 teaspoon salt
6 pcs chili (siling labuyo or Green Finger Pepper)
MSG

Pork Kilawin Cooking Instructions:In a casserole, put pork skin/Meat in water and some salt.Bring to a boil and simmer for 20 minutes or until the pork is tender and the skin is soft.Remove pork skin from water.Slice the pork skin into bite sized pieces while still hot.Saute it till its Golden BrownPlace in a bowl and add vinegar, chili, soy sauce and chopped, uncooked onions and tomatoes.Serve immediately!
